Discovered in Ontario by Corlis Bolton Haynes, the Jerusalem artichokes of the same name have been selected for both smoothness and large tuber size by the family for generations. Commonly used as a garden or interior wind break.

Jerusalem artichokes can be roasted, sautéed, pureed, fried, baked, caramelized, and more, making them as versatile to cook with as a potato, if not more so!
