A highly sought-after heirloom Jerusalem Artichoke, Skorospelka is known for its high yields of smooth red-purple skinned tubers with tan flesh.
The Artichoke Jerusalem, also known as sunroot, sunchoke, or earth apple, is a species of Sunflower. It is cultivated as a root vegetable. The flowers are yellow and the tubers are often elongated and resemble a ginger root. Skorospelka Purple is hardy and low-maintenance. This plant will spread easily and grows under most prairie conditions. It is best to harvest tubers late in fall and preferably after at least one killing frost.
