Beaver Valley Golden is an heirloom variety of Jerusalem Artichoke, that produces an attractive golden-tinged root with white flesh.
The Artichoke Jerusalem, also known as sunroot, sunchoke, or earth apple, is a species of Sunflower. It is cultivated as a root vegetable. The flowers are yellow and the tubers are often elongated and resemble a ginger root. Beaver Valley Golden is hardy and low-maintenance. This plant will spread easily and grows under most prairie conditions. It is best to harvest tubers late in fall and preferably after at least one killing frost.
