The Artichoke Jerusalem, also known as sunroot, sunchoke, or earth apple, is a species of Sunflower. It is cultivated as a root vegetable. The flowers are yellow and the tubers are often elongated and resemble a ginger root. The Artichoke has a crisp and crunchy texture when raw and they vary from color ranging from pale brown to white, red, or purple.
The sunchoke is hardy and low-maintenance. This plant will spread easily and grows under most prairie conditions. It is best to harvest tubers late in fall and preferably after at least one killing frost.
Best ways to cook: Soup, Risotto, Gratin, Sautéed, Roasted, or Puréed
