First Rhubarb Harvest of the Season at Prairie Gardens!

Nothing says spring on the Prairies like that first armful of crisp rhubarb. Our Zone 3 plants are waking up beautifully — and we’re excited to share a few tips we’ve learned after 70 seasons of growing in the Edmonton region.

Harvest Tip: Don’t Cut — Twist & Pull

Cutting leaves part of the stalk behind, which can rot and invite disease. Instead, take the stalk low on the plant, twist gently and pull upward. This removes the whole stalk and signals the plant to grow more.

More Prairie‑Hardy Rhubarb Tips (Zone 3)

  1.  Wait until Year 2 to harvest — and only take 3–4 stalks. Let the plant build its root strength first.
  2.  In Year 3 and beyond, always leave at least 6 stalks. This keeps the plant vigorous for decades.
  3.  Harvest by size, not colour. Stalks should be 10–12 inches long. Some varieties never turn red—and that’s perfectly normal.
  4. Stop harvesting by late July. This gives the plant time to recharge for next spring.
  5. Rhubarb leaves aren’t edible — but they’re great mulch. Cut them off right in the garden and lay them around the plant. They hold moisture and break down into natural fertilizer.
  6. Remove flower stalks as soon as they appear. Temperature swings can trigger blooms. If left on, the plant puts its energy into seeds instead of stalks.
  7. Freeze it to enjoy all year. Chop and freeze — that’s it. No blanching needed.
  8.  Divide every 5–10 years. Spring or fall division keeps rhubarb productive and healthy.
