Horseradish is a root vegetable that is very easy to plant and rewarding to grow because it can be used in many recipes or as part of a horseradish sauce. The appearance of the vegetable is that its white, firm, and has a spicy taste. Grow this in your herb garden. Starts out as lovely white flowers that will rise above the foliage. The foliage is large, glossy, and green. The roots are what you will use to make your sauces and seasonings, but do not leave them in the ground for too long or they will become woody.
Horseradish is a perennial herb that will produce the creamy white roots with the white flesh, and be ready for harvest late Winter to Mid Spring.
It will grow to be about 24 inches tall, and with a spread of 24 inches. It grows at a fast rate. It prefers to grow in average to moist conditions, but shouldn’t be allowed to dry out. It is not particular to soil type of pH. It can be propagated by division.
