APPETIZER
Beet & Zucchini Carpaccio
Thinly sliced seasonal beets and zucchini, layered with local microgreens and a balsamic reduction. A refreshing, earthy opener with a modern Brazilian twist.
SALAD
Everything from the Farm Salad
Seasonal mix of lettuces, spinaches, greens, mustards, edible flowers, tomatoes, quick pickles and anything else that is looking especially tempting on the farm. House-made vinaigrette.
AMUSE-BOUCHE
Grilled Apple Skewers with Honey & Herb Glaze
Charcoal-grilled Prairie Gardens apples brushed with a glaze of local honey, fresh herbs, and a dash of lime. A warm, rustic nod to the Brazilian open-fire tradition.
MAIN COURSE
Beef au Madeira Sauce with Piemontese Rice
Premium Alberta beef grilled over open flame (charcoal or wood), served with a rich Madeira wine sauce and creamy Piemontese-style rice. A true Brazilian classic with a farm-fresh Canadian soul.
DESSERT
Coconut Mousse with Local Berries
Chilled mousse made with coconut milk and cream, topped with a medley of Prairie Gardens berries and garnished with toasted coconut and mint. A tropical, light finish to a flavorful evening.
