The flowers are yellow and the tubers are often elongated and resemble a ginger root. The Artichoke has a crisp and crunchy texture when raw and they vary from color ranging from pale brown to white, red, or purple.
The sunchoke is hardy and low-maintenance. This plant will spread easily and grows under most prairie conditions. It is best to harvest tubers late in fall and preferably after at least one killing frost.
